Super Easy, 5 minute Guacamole Recipe!

Guacamole!  This guacamole recipe is seriously my favorite thing to eat for lunch a snack.  Okay, let’s be real.  I often eat it for lunch.  But it’s so good for you! It’s full of heart healthy monounsaturated fats, fiber, potassium, vitamin C, vitamin E, vitamin B6 and magnesium, and it’s so fresh and delicious.  And it takes 5 minutes to make!

INGREDIENTS

  • 1 Cup organic Cilantro
  • 2 organic Avocados
  • 1/4 cup finely chopped organic Red Onion
  • 1/2 of an organic Lime
  • Salt to taste (freshly ground sea salt is my favorite!)

So there is no exact science to the perfect amount of all these ingredients.  I never measure out an amount of anything in this recipe.  I literally start with the onion, and I chop it up very finely (I don’t want to eat big chunks of onion in my guacamole, but instead I want to taste the onion just enough to make the guac delicious.  Then I chop up about a cup worth of cilantro. But let’s be clear here…I know you all think the avocado is the star of the show here, but I disagree.  The cilantro is king, and I will forever give it my undying adoration.  You just don’t have good guacamole without good cilantro. So you may want to add more cilantro because you are mildly obsessed with it, and you think everyone that thinks it tastes like soap has obviously gone crazy-balls.  Okay, now I’ve gotten that out.  I didn’t want you to leave this recipe without knowing my true feelings about cilantro.  Moving right along….put the cilantro and the onion together and then squeeze that lime liberally all over those two ingredients.  Then add your salt.  Mix those together nicely.  And then finally you want to add your avocado. I know everyone has a different way of chopping up their avocado.  I simply take a knife and make a tic-tac-toe pattern in the avocado half and then scoop it out into the bowl with the rest of the ingredients.  From there I mash it all up and mix together.  I take three or four little tastes and add lime and salt as needed.  You simply can’t go wrong with this recipe and everyone will love it!  And of course, get some good chips to dip into the guac if you don’t want to be a barbarian and eat it straight with a fork (p.s. I am a proud barbarian). Voila!  Happiness and health served in a bowl!  Enjoy!

p.s. I know some of you like tomatoes in your guacamole, but I like to keep my guac as simple as possible.  That means no tomatoes, and I like it that way (nothing against tomatoes…I like those guys too…just not in my guac).

p.s.s. I feel the need to put the “everything in moderation” disclaimer out there.  While avocados are quite healthy, they can be high in calories if you just keep eating, eating, eating.  So you know…don’t eat til it hurts!
